Some recipes are flashy. Others are fancy.
And then there are the ones that quietly become household legends.

This is one of those.

It started on a busy afternoon when I didn’t feel like cooking, didn’t feel like chopping, and absolutely did not feel like washing a pile of dishes. I browned a pound of ground beef, opened a few cans, dumped everything into the slow cooker, and hoped for the best.

What came out hours later was a rich, hearty, deeply comforting soup that smelled like I’d been cooking all day—when in reality, I barely lifted a finger.

My husband took one bowl… then another… then asked if there was more for tomorrow.
There wasn’t. He finished the pot.

Now it’s officially in our regular rotation, especially on cold nights, busy weekdays, or anytime we want something filling without fuss.

Ingredients

  • 1 lb ground beef

  • 1 can tomato soup
  • 1 can beef broth
  • 1 can kidney beans, drained and rinsed
  • 1 small onion, diced (optional but recommended)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and black pepper, to taste

(Optional add-ins: corn, green beans, macaroni, or a pinch of chili powder)

Instructions

  1. Brown the Beef
    In a skillet over medium heat, cook the ground beef until fully browned. Season lightly with salt and pepper. Drain excess grease.
  2. Add Everything to the Slow Cooker
    Transfer the beef to your slow cooker. Add all five canned ingredients, plus the onion if using.
  3. Season and Stir
    Sprinkle in garlic powder, onion powder, paprika, and a little extra pepper. Give everything a good stir.
  4. Let It Cook
    Cover and cook on:
    • LOW for 6–7 hours, or
    • HIGH for 3–4 hours
  5. Taste and Adjust
    Before serving, taste and adjust seasoning if needed.
  6. Serve Hot
    Ladle into bowls and watch it disappear.

How to Serve It

This soup is hearty enough to stand on its own, but it’s even better with:

  • Crusty bread or dinner rolls
  • Grilled cheese sandwiches
  • A sprinkle of shredded cheese on top
  • Crackers or cornbread on the side

It also reheats beautifully, which makes it perfect for leftovers—if you’re lucky enough to have any.
